A little about me: My name is Courtney Lee and I grew up in a small town near Pasadena, CA called Arcadia. I grew up in a family of doctors, but always felt a calling to create my own path through business. To my parents' unease, I worked for 2 unsuccessful startups before my dad got diagnosed with Type II Diabetes. It was from that point I committed myself to helping my dad through food. And fixing our everyday creamer became my goal.

I mailed my very first sample of coffee creamer in August 2017 and, with my mom's help, grew this business out of a 400 sq ft pool house in my parent's backyard!

It was the best of times, it was the worst of times.

But my family and I desperately needed a product tasted like a regular creamer without the sugar, hydrogenated oils and artificial chemicals that are problematic for diabetics. I was committed to figuring out a solution.

Directions:

Step 1: Scoop 2 heaped TB of creamer into cup first*

Step 2: Pour hot coffee on top. Stir

*It's important to pour the hot coffee on top of the powder, otherwise it will clump more. We do not use any emulsifiers or artificial ingredients so tiny clumps my occur. Using a milk frother will completely blend the creamer and will produce an incredibly smooth finish.

Make the BEST Cafe-Style Flavored Latte in less than 2 min:

Step 1: Microwave 1/4 cup milk of choice for 30 seconds

Step 2: Add 2 heaped TB of creamer to hot milk

Step 3: Use milk frother to blend for 10-15 seconds

Step 4: Pour hot coffee on top. Enjoy!

+ How many carbs and where does it come from?

There are 5g total carbs and 1g net carb. How?

There are 2 gm of unlisted Dietary Fiber coming from 1 g Gum Acacia (Gum Arabic) + 1gm Inulin (Chicory Root Fiber)

5g Carb - 2g unlisted Fiber - 2g Erythritol = 1 g Net Carb

These are two prebiotic fibers with gut-health benefits we use as our oil and flavor carriers; however, the FDA does not allow us to legally recognize them as nutritional "Dietary Fibers."

This is why it says 0g Dietary Fiber on the nutrition facts panel despite being soluble fiber that may help stabilize blood sugar.

There is ~1gm of Acacia per serving and ~1gm Chicory Root. These are two prebiotic fibers with gut-health benefits we use as our oil and flavor carriers; additionally, some flavors like Cacao Mocha contains real cacao powder which also contributes some trace carbs. Yes, it's real food!

+ What are the MCT’s in your creamer made of?

Our MCT’s are made from a blend of coconut oil and sustainably sourced palm oil. Our supplier uses environmentally conscious supply chain techniques to ensure that Prymal does not contribute to deforestation. The MCT’s that we use are a 70% fat blend, with a ratio of 50% C8 (Caprylic Acid) to 20% C10 (Capric Acid).

Is it vegan and 100% dairy free?

No. While this is vegetarian and non-dairy, we use sodium caseinate as one of the carriers in our MCT Oil and Coconut Oil powder. Sodium caseinate is milk-derived and has the lactose sugar removed.If you are lactose intolerant this should be safe to consume but please consult your dietitian or doctor if you're unsure. Do not consume if allergic to casein or are vegan.

Sodium caseinate is one of the carriers used in the MCT Oil powder and Coconut Oil powder. In order to turn a liquid fat into a powder form, and must be applied onto a starch carrier. Most companies will use GMO corn maltodextrin because it is cheap and absorbs well. I tried lots of different versions to avoid the GMO corn maltodextrin.


The all Acacia fiber was ideal in profile but it made the creamer gritty, way more clumpy and have kind of a dirt taste.

I tried all types of natural and healthier carrier alternatives and using a combination of the chicory root Inulin and sodium caseinate produced the best blendability and creamy mouth feel. It's less than 2% of sodium caseinate and there is no lactose in it so it's safe for people like myself who are lactose intolerant. But it is not vegan or 100% dairy free.

I'm always on the lookout for more ingredients that I can use to create a fully vegan version, but for now. This non dairy products is a great fit for a lot of customers and tastes like a creamer.

What are "natural flavors?"

I fully understand the concern about natural flavors and I would love to help explain about Prymal's natural flavor quality vs others because there is absolutely a spectrum.
I'll discuss the difference in the source of flavor and then the starch carriers used.


Our natural flavors are created by extracting the essence oils and flavor compounds of real food, natural ingredients. For example our hazelnut is extracted from True hazelnuts, vanilla contains real vanilla beans, Etc.
Other companies natural flavors are created synthetically and made from complete chemical derivatives. This is very cheap to do which is great for cost effectiveness but means the health integrity is questionable.


After extracting the essence oil or after creating the synthetic flavor, these need to be attached to a dry starch ingredients so that add powdered product can remain powdered and not liquid. The most common carrier is corn maltodextrin. This is GMO corn maltodextrin that, similar to the chemical and synthetic flavors, is extremely cost-effective.


I worked extremely closely with the flavor partner I use to test out a different carrier. It took us months to R&D but I got them to switch to Acacia fiber, which is a high quality and gut friendly Prebiotic carrier.

 

My natural flavors are actually the most expensive ingredient in my creamer. I care about the quality and derivative of my flavors so I do not cut corners.


No pressure or need to purchase the product, but I do hope that this helps explain the process + differences in natural flavors.

+ Sugar-free coffee creamers already exist. What makes Prymal’s sugar-free creamer any different than those?

Low carb is best, keto is best, vegan is best, carb cycling and fasting is best--am I the only one who's going crazy with how many different "best" ways there are to eat?!

There was a time in my late teens to mid 20's where I wrestled with the worst body image. I was constantly yo yo dieting and chasing the latest quick fix to "finally" get my body to where I thought it needed to be.
